SQUASH-TOMATO MEDLEY

Ingredients:

Several Squash - Use: yellow straight or crookneck and/or zucchini, sliced
½ to 1 whole tomato, cubed
1 small onion, chopped
Butter or oil - 1-2 Tbls.
salt and pepper to taste

How to:

In a skillet large enough for the squash:

1. Melt butter or add oil over medium high heat (Do not burn butter.)
2. Add onion and squash
3. Stir-fry until squash and onions begin to change consistency--about 5 minutes.
4. Add cubed tomatoes and stir
5. Turn burner to medium-low and cook about 5 minutes. Veggies should not be mushy.
6. Sprinkle with salt and pepper to taste
7. Serve immediately
