KATHIE'S POTATO SALAD

Makes 8 -10 servings as a side dish

Ingredients:

5 lbs. cooked, cubed potatoes (Boil approximately 10-15 minutes.)
3 celery stalks, finely chopped
1 large onion, finely chopped
2 green onions with tops, finely chopped
1/4 cup black olives, finely chopped
2-3 Tbls. herbed vinegar or balsamic vinegar
2 cups sour cream (can substitute 1 cup plain yogurt)
5 hard-boiled eggs, chopped
salt, pepper, cayenne, garlic powder, celery seed to taste

Mix all ingredients together while potatoes are still warm.

Serve warm or refrigerate over night.
