CUMIN CARROTS - TEX MEX STYLE

Cumin is a sweet-tasting spice that goes well with many veggies.

Makes 4 servings.
Increase amounts as needed.

Ingredients:

1 lb. carrots, organic is best and sweetest
4 large green onions, sliced
1 Tbls. olive oil
1 Tbls. butter, organic is best
1 tsp. ground cumin
˝ tsp. Sucanat or honey

How to:

1. Clean and slice carrots to desired size.
2. Place carrots in a sauce pan or skillet.
3. Add a small amount of water to steam the carrots.
4. Bring to a simmer and cook 3-5 minutes or until the carrots are just tender.
5. Drain well into a colander.
6. Sauté the green onions in the oil and butter in the same pan or skillet, until tender but not brown...about minutes.
7. Mix in cumin and sweetener.
8. Return carrots to the pan, toss, heat and serve.
