COLD SLAW PALLADINO

Here is our favorite cold slaw recipe.
We are trying to add more cruciferous veggies to our diet and this does a good job of it. And, they are all raw!

You will need:

A slicer, good, sharp knife, food processor or something to get the cabbage into slaw
A large bowl
A large spoon for mixing
Measuring cups and spoons

Ingredients:

1/4 cup olive oil
1 tsp Real Salt Brand or Celtic Sea Salt Brand (add more to taste at the end)
2 cloves garlic, crushed
juice of 1/2 juicy lime or lemon
1-2 tsp. celery seed
2 heaping Tbls. mayonnaise (Dukes has no sugar, Vegenaise, etc)
2 Tbls. Balsamic vinegar

Veggies:
1/2 cabbage, org, shredded
3 carrots, org., shredded
1/2 onion, shredded or minced
1/4 to 1/3 red cabbage, org. shredded, optional, but adds color

How to:

 Mix the first list of ingredients together.
Add to all the shredded veggies.
Mix/toss well.
Refrigerate for at least 30 minutes before serving.

The longer it marinates, the better.
