TURKEY SALAD SUPREME
Makes 4 servings
Ingredients:
2 cups diced cooked turkey
1 cups pineapple chunks, well drained, unsweetened
1 cup diced celery
1/2 cup sliced green onions
1/4 cup roasted peanuts
1 cup green grapes, halved
2/3 cup mayonnaise (or 1/4 cup olive oil & 1/3 cup mayonnaise)
2 Tbls. chopped chutney
1 Tbls.. lime juice
1/2 tsp. curry powder
1/4 tsp. salt
lettuce leaves for garnish
How to:
1. In mixing bowl, toss first 6
ingredients.
2. In a small bowl, combine all remaining ingredients except lettuce. Pour over turkey mixture and mix gently.
3. Chill.
4. Serve on a bed of lettuce.
