KATHIE’S MARINARA SAUCE

This marinara is being made from
freshly prepared tomatoes from our garden.
They were cooked for approximately 45 minutes to remove most of the water from
the tomatoes.
Cooks in 30 minutes
Good for pizzas, lasagna, pastas, etc.
Ingredients:
1/3 cup olive oil (only olive)
1 large onion, chopped, optional (will make sauce sweet)
6-7 garlic cloves, crushed
2 Tbls fresh basil, chopped (or dried - 1 tbls) and/or 2 Tbls. Fresh oregano (or
dried - 1 tbls.)
1 to 1-1/2 tsp. Salt
˝ tsp. Crushed red pepper
1 can (1 lb. 12 oz) crushed tomatoes or 12 fresh tomatoes, cleaned, stemmed and
crushed in a blender. If needed, you may have to cook these down some to remove
excess water.
How to:
1.* Sauté garlic, onion
(if used), in olive oil over medium-high heat.
2. Add all other ingredients except tomatoes. Cook ˝
minute longer, stirring to keep from scorching.
3. Add tomatoes and stir until boiling.
4. Simmer uncovered for 30 minutes. Pan may be partially
covered with a lid or splatter screen to reduce splatters.
One pound of meat, poultry, or chicken/turkey-Italian sausage may be added at Item no. 1
*Recipe may be doubled, tripled, etc.
