POLLO ALLA CACCIATORA
(Chicken Hunter’s Style)

Ingredients:

1 fryer, cut into pieces
1 large onion, chopped
1/3 cup olive oil, for cooking
½ cup freshly-ground whole wheat flour (any berries)
4 cloves garlic, crushed
1 large can (28 oz.) tomatoes, diced
1 cup mushrooms, sliced
2 large bell peppers, sliced
salt and pepper to taste

How to:

1. Season chicken pieces with salt and pepper and dust with flour.
2. Heat oil in skillet and brown chicken on all sides for about 10 minutes.
3. Add onion, pepper, garlic and tomatoes.
4. Cover and simmer slowly for 40 minutes.
5. Add mushrooms and cook another 15 minutes or until mushrooms and chicken are tender.
6. Serve very hot over cooked egg noodles. Serves 4-6.
