KATHIE'S PASTA IMPERIAL

Please read through recipe before starting

Makes 3 - 4 main dishes or 6 - 8 side dishes

Ingredients:

4 Tbls. butter, unsalted best, organic
1/4 cup olive oil
7 cloves garlic, minced or crushed
1/4 cup fresh parsley, minced or 2 Tbls. dried parsley
2 Tbls. fresh basil, minced or 2 tsp. dried basil
2 chicken breasts, boned, skinned and cut into small strips or pieces
(mushrooms maybe substituted meatless diet)
salt and pepper to taste
3-5 pieces sun-dried tomatoes, cut into small pieces
5 ripe Italian tomatoes, cut into pieces or 3 large, ripe regular tomatoes, seeded
1/2 cup freshly-grated Parmesan cheese
1/3 to 1/2 cup heavy (whipping) cream
1 lb. pasta (colorful pastas make a cheerful dish), cooked and kept warm

How to:

1. In a large skillet, heat butter and oil. Sauté garlic, parsley and basil over low heat for 5 minutes.
2. Stir in chicken or mushrooms and cook for 2 minutes.
3. Add tomatoes (dried and fresh), cook for 10 minutes over medium heat, stirring occasionally.
4. Add salt and pepper.
5. Remove from heat and add cheese, stirring constantly.
6. Add cream slowly, stirring constantly.
7. Serve over cooked pasta immediately. Pasta and sauce may be tossed together and then served.
