Key-Limed Chicken

Make servings according to your need by increasing ingredients. This recipe is for 6 people.

Ingredients:

2 lbs. rinsed, skinned and boned chicken breast, organic, sliced into ½-inch-wide strips
Juice of 4-6 key limes or 1-2 limes
½ tsp. crushed red pepper flakes
1-2 cloves fresh garlic, crushed (dried minced garlic will work)
3 tbls. parsley flakes or 2 tbls fresh parsley, chopped
salt
2-3 tbls. butter, organic

How to:

1. Marinate chicken in lime juice, pepper flakes, garlic, parsley and salt for at least 30 minutes. Be sure to mix well, cover and place in refrigerator.
2. In a large skillet, melt butter over medium-high heat until melted but not brown or burning.
3. Increase heat to high and add chicken one piece at a time to the butter. Do not add the leftover drippings. Save these for later.
4. Quickly stir fry the chicken until lightly browned and completely done.
5. Remove chicken to a serving dish. Add drippings to pan and stir. Put chicken back into pan, toss around in drippings and serve immediately.
