JAMAICAN
ROAST BEEF
OR CHICKEN
Ingredients:
1 whole chicken or beef roast (pot roast/chuck type)
Marinade:
Using a blender, blend the following ingredients well.
1 onion, chopped
1 tsp. thyme
salt/pepper to taste
garlic, crushed (large amount, say 7 large pieces or more) - powdered 1 Tbls
several dashes Tabasco sauce or similar pepper sauce
2 cups catsup, made without sugar
Enough small carrots, small onions and quartered potatoes to add to pan when cooking for your needs.
How to:
1. Place meat in baking dish or pan
2. Pour marinade over meat and if possible allow to remain overnight refrigerated or at least several hours.
3. Before baking, add carrots, onions and potatoes
4. Cover tightly with foil, but try to keep foil from touching the meat.
5. Bake at 375 degrees for 2-1/2 hrs to 3 hours for meat or approximately 2 hours for chicken. Test for doneness. Meat will easily cut or pull apart when done.
