BAKED FISH WITH MUSHROOMS

Serves 4 - 6 or recipe may be increased or decreased as needed

Ingredients:

Fish filets (6 filets)
Mushrooms, thinly sliced (approximately 1 lb.)
scallions, thinly sliced (approximately 1 cup)
salt to taste
freshly ground pepper or crushed red pepper to taste
1 cup freshly-ground whole wheat flour (any wheat grains will do)
butter - 1/4 to ˝ lb.
fresh bread crumbs from whole wheat bread - ˝ to 1 cup
olive oil - 2 - 4 Tbls

How to:

1. Season fish with salt & pepper.
2. Dust fish with flour (a plastic bag is good for this)
3. Shake off excess flour.
4. In frying pan, melt 2-4 Tbls. butter and 2-4 Tbls. olive oil
5. Brown fish on both sides. Do not over cook.
6. In another skillet, sauté mushrooms in 2-4 Tbls. butter.
7. Place mushrooms in baking pan that will hold all filets.
8. Add fish to top of mushrooms.
9. Melt 1-2 Tbls. butter in skillet... sauté scallions 1 minute and sprinkle over fish.
10. In skillet, brown bread crumbs in butter. Sprinkle over fish and scallions.
11. Bake at 400 degrees for 15-20 minutes or longer, depending on thickness of fish.
