LOU’S PICADILLO
(Pee-kah-dee-yo)

Makes approximately 6 servings

Ingredients:

1-1/2 lb. ground meat (if using goat meat, cook separately and drain thoroughly before adding onions)
2 medium onions, chopped
½ cup olive oil (do not use oil if using goat meat unless meat is very lean)
3 Tbls. chopped salad olives
1-1/2 Tbls. capers, small to medium sized
3/4 cup raisins or currants
salt and pepper to taste
1 clove garlic, crushed or powdered equivalent
2 bay leaves
½ cup white cooking wine
1 - 14.5 oz. can crushed tomatoes
2 cups rice (white or brown), cooked

How to:

1. Brown meat and onions in olive oil.
2. Add all ingredients except tomatoes. Stir well.
3. Cook thoroughly for approximately 5 minutes.
4. Add tomatoes and bring to a boil.
5. Turn to simmer and cook for 30 minutes.
6. Serve over rice.
