FRUIT CRISP
Great for Pesach ( Passover)

This is a very easy dessert that we believe your family will love. You can use any kind of fresh, frozen or canned fruit...apples, blueberries, cherries, strawberries, raspberries, peaches...just have fun. We have found that fresh or frozen is the best! It is also wonderful for Pesach because there is no leavening. We will be having it as one of our desserts this year. Yum! Can't wait!

You will need:

1 - 9" x 13" baking dish, or similar size, greased
Large mixing bowl
Your hands
Oven set to 375 degrees

Place these ingredients in pan first:

10 tart, organic apples or equivalent in other fruit. If using canned fruit, be sure to drain and use approximately ½ cup of remaining juice in the recipe. Make peaches or apples bite-sized slices or pieces. Peaches do not have to be peeled, but apples do.

Juice of 1 lemon, lime or equivalent in orange juice

½ tsp. Cinnamon

Topping:

1 cup freshly-rolled oats
1 cup freshly-ground whole wheat flour (any wheat berries will work)
1 cup Sucanat or Sucanat with Honey
1/4 tsp. Real Salt Brand
1 tsp. Cinnamon
1 cup walnuts, chopped
1 cup butter, organic (do not substitute margarine), room temperature

How to:

1. Place prepared fruit, lemon, lime or orange juice,
½
cup of juice from canned fruit (if you are using canned) and cinnamon in a large mixing bowl.
2. Mix together and place in the bottom of a greased baking dish.
3. Combine oats, flour, Sucanat, salt, cinnamon and walnuts in a bowl. Mix together.
4. Add butter and with your hands, mix all ingredients together forming a rich, crumbly mixture. Add to the top of the fruit.
5. Bake for 25 minutes at 375 degrees or until fruit is done and topping is brown.

Oh so easy!!! May be served warm or cold with toppings like whipped cream or homemade ice cream.

But, it is wonderful just as it is!
