OATMEAL YOU-NAME-IT COOKIES

Makes 5 dozen

Ingredients:

1 1/4 cups unsalted butter, room temp (2-1/2 sticks)
1 3/4 cup Sucanat
2 large eggs
1 tsp. pure vanilla extract
½ cup chopped nuts
2 ½ cups rolled oats, freshly rolled oat groats is best
½ tsp. baking SODA
2 cups freshly-ground soft white wheat pastry flour, fine grind
½ tsp salt (Real or Celtic Sea Salt)
½ tsp ground cinnamon
1 cup dried dates, chopped into 1/4-inch pieces

Other optional ingredients

2-3 Tbls. Shredded, unsweetened coconut (health food store)
Chocolate chips (health food store - non-sugar type)
Raisins or currants

How to:

1. Preheat oven to 375 degrees.
2. In large bowl, beat butter and Sucanat until smooth.
3. Beat in eggs one at a time.
4. Add vanilla.
5. In a separate bowl, combine the oats, flour, baking SODA, salt and cinnamon.
6. Gradually add to the butter mixture, beating until well combined.
7. Stir in dates and nuts.
8. Drop batter by tablespoonfuls onto lightly greased baking sheets.
9. Bake until golden brown - 12 to 14 minutes.
10. Cool on wire racks.
11. Store at room temp in airtight container for up to 2 days or refrigerate.
