OATMEAL CHOCOLATE CHIP COOKIES

Makes approximately 2-1/2 dozen

Ingredients:

1 stick butter (½ cup or 4 ounces)
1 cup Sucanat
1 egg
1 Tbls vanilla extract (not flavoring)
3/4 cup freshly-ground soft white wheat pastry flour, fine grind
½ tsp. baking SODA
1/4 tsp. salt (Real or Celtic Sea Salt)
1 cup oats, freshly rolled whole oat groats if possible
4 oz. chocolate chips (from health food store - non-sugar type)
2/3 cup chopped nuts

How to:

Pre-heat oven at 375 degrees.

1. Mix first 4 ingredients until well blended and creamy.
2. Add next three ingredients. Mix well.
3. Add last three ingredients. Mix only until blended.
4. Place by teaspoonfuls onto greased cookie sheet.
5. Bake at 375 degrees for 9-10 minutes for soft cookies or 12-13 minutes for crisp.
