NITA’S ICE CREAM

For use with an electric or hand ice cream maker.

Read this recipe completely before starting.

Ingredients:

6 quart size                                                     5 quart size

1/2 gallon organic milk                                     4 cups organic milk
5 eggs                                                             4 eggs
1 cup honey                                                     3/4 cup honey
1 tsp. salt                                                         1 tsp. salt
2-1/2 pints heavy cream, org                             3 pts heavy cream, organic
1/3 cup flour, fine-grind soft white wheat           1/3 cup flour, fine grind 
7 tsp. vanilla extract                                          7 tsp. vanilla extract
1 can evaporated milk                                       1 can evaporated milk
2 pints ½ & ½, organic                                      1 pints ½ & ½, organic

How to:

1. In a saucepan, mix flour, honey and salt.
2. Stir in evaporated and regular milk.
3. Cook until almost boiling, stirring constantly over medium heat.
4. Beat eggs.
5. Add 1 cup of cooked milk mixture to eggs. Pour milk in slowly using a whip.
6. While beating milk/flour mixture in saucepan with a whip, add egg/milk mixture. Stir well.
7. Cook until there is no taste of egg. Approximately 5-10 minutes. Do not boil.
8. Add ½ & ½, then cream and vanilla, stirring constantly.
9. Refrigerate several hours until very cold.

If adding bananas, add only at time of freezing in the machine.

Additional sweetener may be used to your taste.
