NEW YORK STYLE CHEESECAKE

Makes 12 servings

Ingredients:

1-7/8 cup graham cracker crumbs
½ cup butter, 1 stick, melted
1 cup Sucanat, divided
2 lb. (4 - 8 oz. packages) cream cheese, organic (not low fat)
2 large eggs, beaten
1 tsp. vanilla extract (not flavoring)
2 Tbls. cornstarch, organic
1 cup sour cream, sour cream

How to:

1. Preheat oven to 450 degrees.
2. Place crumbs in a bowl with butter and 2 Tbls. Sucanat. Blend well.
(save 2 Tbls. crumbs for topping)
3. Press mixture onto bottom and sides of a greased 9-inch spring-form pan.
4. Chill in freezer while preparing filling.
5. In mixer bowl, beat cream cheese and remaining Sucanat until smooth and light.
6. Beat in eggs, vanilla and cornstarch, just until blended.
7. Stir in sour cream.
8. Pour mixture into crust and bake for 10 minutes.
9. Reduce temperature to 200 degrees and bake 45 minutes. Center needs to be set and wobbly.
10. Turn off oven. Allow to cool with door opened slightly for 3 hours.
11. Remove sides from pan.
12. Sprinkle with remaining graham cracker crumb mixture and chill.
