Hamantaschen Cookie Recipe
(Purim Recipe)

Ingredients:

2 sticks butter, organic best
2 cups Sucanat or Sucanat w/ Honey Crystals Brand
2 large eggs
2 tsp. Vanilla extract
4 tsp. Baking POWDER
4 cups freshly-ground, soft white pastry wheat flour, fine grind
Filling: fruit jams, fruit butters, pie filling, poppy seed mixture or prune mixture.

How to:

1. Cut butter into Sucanat.
2. Blend thoroughly.
3. Add eggs and vanilla and blend well.
4. Add flour/baking powder mixture, ½ cup at a time, blending well
between each addition.
5. Put batter in waxed paper or other container and refrigerate
over night or at least a few hours.
6. Roll out to 1/4-inch thickness and cut into circles with round cookie cutter or biscuit cutter.
7. Put a tablespoon of filling in the middle of each circle.
8. Fold up the sides to make a triangle, overlapping the sides as much as possible so only a little filling shows through the center. Pinch edges to hold together.
9. Bake at 375 degrees for about 10-15 minutes, until golden brown.
