KATHIE’S EASY PUDDINGS

Recipes may be doubled

Vanilla

Ingredients:

3 cups fresh goat milk, organic milk or ½ & ½
¼ cup cornstarch, organic
1/2 cup Sucanat
¼ tsp. salt
2 tsp vanilla extract (not flavoring)

How to:

1. Scald 2-2/3 cups milk.
2. In separate small bowl: mix cornstarch, Sucanat, and salt.
3. Add remaining 1/3 cup milk and mix thoroughly.
4. Add to scalded milk stirring briskly with a whisk.
5. Cook over low heat, stirring constantly, until thickened.
6. Continue cooking for 5 minutes or until cornstarch is completely cooked.
7. Cool slightly and mix in vanilla.
8. Pour into serving dish or dishes. Serve warm or cold.

Great with freshly whipped cream!

Chocolate

Follow recipe above, adding 3 squares or 3 ounces of unsweetened chocolate to the milk to be scalded. When chocolate is melted and milk scalded, proceed as above.

Tapioca

Ingredients:

3 cups fresh goat milk, organic milk or ½ & ½
1/8 cup cornstarch, organic

½ cup Sucanat
¼ tsp. salt
2 tsp vanilla extract (not flavoring)
3 Tbls. Tapioca grits (not pearls)
1/3 cup boiling water

How to:

1. Scald 2-2/3 cups milk.
2. In separate small bowl mix boiling water and Tapioca; mix well. Allow to stand until water is absorbed.
3. In another small separate bowl: mix cornstarch, Sucanat, and salt. Add remaining milk and mix thoroughly.
4. When Tapioca has absorbed water, mix it into cornstarch mixture.
5. Add to scalded milk stirring briskly with a whisk.
6. Cook over low heat, stirring constantly, until thickened. Continue cooking for 5 minutes or until cornstarch and Tapioca are completely cooked.
7. Cool slightly and mix in vanilla.
8. Pour into serving dish or small dishes. Serve warm or cold.

Great with freshly whipped cream!
