KATHIE’S PIE CRUST (1963)

Makes one 9-inch pie crust

Ingredients:

1/3 cup plus 1 Tbls. butter, organic (6 Tbls)
1 cup freshly-ground soft white pastry wheat flour (soft white wheat berries), fine grind
½ tsp. Salt (Real or Celtic Sea Salt)
2 to 3 Tbls. ice water
1 or 2 tsp. Sucanat or Sucanat with Honey Crystals brand, optional

How to:

1. Cut butter into flour, salt, and Sucanat.
2. Add water one Tbls at a time, stirring flour together until it begins to pull from sides and forms a ball. Add more water if needed.
3. Chill dough slightly for easier handling.  Roll out on floured board or between two sheets of waxed paper.
If too hard to handle, dough may be placed in pieces into pie pan and pressed into place.
4. Bake at 475 degrees for 8 to 10 minutes.

I learned this recipe in Jr. High Home Ec class!
However, I changed to "real" flour and Sucanat.
