BLENDER BÉARNAISE
SAUCE
HOLLANDAISE SAUCE
MOUSSELINE SAUCE
Ingredients for basic sauce:
3 egg yolks
1 Tbls lemon juice
½ tsp salt
2 drops Tabasco
½ cup butter, organic, melted
Using a blender on low speed, blend all ingredients except butter.
Slowly pour in butter while mixing on low speed.
Béarnaise Sauce
Béarnaise Sauce is great with grilled steaks!
To the above add:
1 Tbls minced onion
1 tsp tarragon leaves
½ tsp. chervil leaves
2 Tbls white wine or 1 Tbls white wine vinegar
Hollandaise Sauce
For veggies, chicken, turkey, fish and poached or soft-cooked eggs as in Eggs Benedict.
Follow directions for first 5 ingredients
Mousseline Sauce
For fish, eggs, artichokes, broccoli, cauliflower and spinach.
Make recipe as for Hollandaise Sauce.
Just before serving, whip1/4 cup chilled whipping cream in chilled bowl until stiff
Fold into sauce.
Makes about 1-1/4 cups.
