HEALTHY MULTI-GRAIN WAFFLES

Makes 4 to 6 waffles

Ingredients: (First part)

In a blender, blend the following ingredients for 3 or 4 minutes at high speed.

1 ¾ cup buttermilk or plain yogurt (we used organic vanilla yogurt...yum!)
To use goat’s or cow’s milk - add 1 Tbls lemon juice or vinegar per cup of milk
and allow to set for 5 minutes.
1 egg
2 Tbls. olive oil
1 Tbls. vanilla
1 cup millet or brown rice
½ cup freshly-rolled oats

Ingredients: (Second part)

To the blender mixture, add the following:

2 tsp baking POWDER
1 tsp salt
½ tsp baking SODA
½ cup freshly-ground whole wheat flour--any berry. (add for thicker waffles)

Bake in pre-heated waffle iron for 3-4 minutes for lighter waffles or 4-5 minutes for darker waffles.
