LOUISE 'S EASY SCONES

Makes 12 scones

Ingredients:

1 cup freshly-ground whole wheat flour (use hard white wheat berries)
3 Tbls. apple juice concentrate, Sucanat, or 2 Tbls. honey
1-1/2 tsp. baking POWDER
1/2 tsp. cinnamon, ground
1/3 cup butter, org
1 cup freshly-rolled oats
1/2 cup raisins, chopped
2 egg whites
2 Tbls. milk

How to:

1. Preheat oven to 400 degrees
2. Mix together: flour, baking powder and cinnamon

3. Cut in butter until it resembles course crumbs
4. Stir in oats and raisins
5. Add egg whites, sweetener and milk.
6. Mix well. Dough will be sticky.
7. Place dough on lightly floured board or wax paper.
8. Pat dough into a 7-inch circle.
9. Cut into 12 wedges, dipping knife into flour as needed to prevent sticking.
10. Place on ungreased baking sheet.
11. Brush tops lightly with milk.
12. Bake for 10-12 minutes or until golden brown.
13. Serve warm with tea or coffee.
