OLD COLONY GINGERBREAD
& LEMON SAUCE
(Recipe works great in a Breadman Ultimate Bread Machine)

Ingredients:

1 cup plus 2 Tbls. Whole wheat flour (made from soft pastry or hard white wheat grain)
1-1/4 tsp. baking POWDER
1/4 tsp. baking SODA
1 tsp. ground ginger
1 tsp. ground cinnamon
1/8 tsp. salt (Real or Celtic brands)
1/3 cup butter (the real thing), organic
½ cup boiling water
½ cup Sucanat
1/4 cup dark molasses
1 egg, well beaten

How to:

1. Stir all dry ingredients together in bowl.
2. Add butter to boiling water and stir until dissolved.
3. Add Sucanat and molasses to water/butter mixture.
4. Combine with dry ingredients, adding egg and beating until batter is smooth.
5. Pour batter into lightly buttered and floured 9-inch square pan.
6. Bake in preheated over 350 degrees for 35 to 40 min. Watch time for Breadman when using cake selection. Check cake periodically for doneness with toothpick.
7. Cut into squares and serve warm or cool with lemon sauce.

LEMON SAUCE

Makes 1-1/2 cups

Ingredients:

½ cup Sucanat or fructose
1 Tbls. cornstarch, organic
1/4 tsp. salt (Real or Celtic brands)
1/4 cup cold water
3/4 cup boiling water
3 Tbls fresh lemon juice (lime will work also)
1 tsp. grated lemon rind (or lime)
½ tsp. vanilla extract (not flavoring)
2 Tbl butter (the real thing), organic

How to:

1. Combine Sucanat, cornstarch and salt in small saucepan.
2. Gradually stir in cold water.
3. Gradually stir in boiling water and cook for 3 minutes or until smooth, clear and thickened slightly.
4. Stir in remaining ingredients.
