CRUNCHY CROUTONS W/ HERBS

Ingredients:

Use fresh ingredients when possible.

3 Tbls. unsalted butter
3 Tbls. olive oil
3 cups bread cubes, day old is best
2 large cloves garlic, minced
1 tsp. chopped parsley
1 tsp. chopped chives
1 tsp. chopped tarragon
3 Tbls. grated Parmesan or Romano cheese

How to:

1. Heat butter and oil in large skillet
2. Add bread cubes and cook over medium-high heat, tossing constantly with wooden spoon for 3 to 4 minutes.
3. Reduce heat to medium-low.
4. Add garlic and herbs. Toss to coat.
5. Continue to cook croutons, tossing frequently until golden brown. About 20 minutes.
6. Transfer to a bowl and toss with cheese.
7. Cool to room temperature, and store in airtight container until ready to use.
