BAKING POWDER BISCUITS

Ingredients:

2 cups whole wheat flour (made from soft pastry or hard white wheat grain)
2 - 3 tsp baking POWDER
1 tsp salt (Real brand or Celtic)
1 Tbls. Sucanat
1/4 cup butter (2 oz.), org
3/4 cup goat milk or organic milk

How to:

1. Pre-heat oven to 450 degrees.
2. In mixing bowl, measure first four ingredients.
3. Cut in butter thoroughly until mixture looks like meal.
4. Stir in all milk and mix well.
5. Place dough on lightly floured kneading board and knead lightly about 20-25 times, about ½ minute.
6. Roll dough to ½ inch thick and cut with biscuit cutter.
7. Place on ungreased baking sheet and bake for 10-12 min or until golden brown.

VARIATIONS:

Cheese biscuits: Stir in ½ cup shredded, sharp cheddar cheese with the milk.

Drop biscuits: Increase milk to 1 cup. Drop dough by spoonfuls onto greased baking sheet.

Herb Biscuits
: Add 1-1/4 tsp. caraway seed, ½ tsp. crumbled leaf sage and 1/4 tsp dry mustard to flour mixture. Or other interesting herb combinations.

SOUTHERN BISCUITS:

Ingredients:

Makes about 2 dozen.
2 cups whole wheat flour (made from soft pastry or hard white wheat grain)
2 tsp. Sucanat
2 - 3 tsp. baking POWDER
1 tsp. salt (Real or Celtic brand)
½ tsp. Baking SODA
1/3 cup butter
2/3 cup buttermilk (or regular milk soured with 3/4 Tbls. vinegar or lime juice and let stand for 5 min)

How to:

1. Pre-heat oven to 450 degrees.
2. Mix together first 5 ingredients.
3. Cut in butter, until mixture looks like meal.
4. Stir in enough buttermilk to make a nice puffy, easy-to-roll dough.
5. Round up dough on lightly floured board.

6. Knead lightly 20-25 times, about ½ minute.
7. Roll out a little less that ½ inch thick.
8. Cut with floured biscuit cutter.
9. Place on ungreased baking sheet.
10. Bake 10-12 minutes or until golden brown.

BUTTER DIPS:

Ingredients:

1-1/4 whole wheat flour (made from soft pastry or hard white wheat grain)
1/4 cup butter
2 tsp. Sucanat
2 tsp. baking POWDER
1 tsp. salt (Real or Celtic brand)
2/3 cup goat milk or organic milk

How to:

1. Pre-heat oven to 450 degree.
2. In square pan, 9 x 9 x 2 inches, melt butter in oven. Remove pan from oven.
3. Mix together flour, Sucanat, baking powder, salt.
4. Add milk and stir just until dough forms, about 30 strokes.
5. Turn dough onto well-floured board.
6. Roll dough around to coat with flour.
7. Knead lightly about 10 times.
8. Roll into 8-inch square.
9. With floured knife, cut dough in half, then cut each half into nine 4-inch strips.
10. Dip each strip into melted butter, coating both sides.
11. Arrange strips close together in 2 rows in pan.
12. Bake 15-20 minutes or until golden brown.

STIR’N ROLL BISCUITS (Using oil v. butter)

BASIC BISCUITS

Makes about 16 biscuits

Ingredients:

2 cup whole wheat flour (made from soft pastry or hard white wheat grain)
2 - 3 tsp. baking POWDER
1 tsp. salt (Real or Celtic brand)
1/3 cup olive oil
2/3 cup milk

BUTTERMILK BISCUITS

2 cups whole wheat flour (made from soft pastry or hard white wheat grain)
2 - 3 tsp. baking POWDER
1 tsp. salt (Real or Celtic brand)
1/4 tsp baking SODA
1/3 cup olive oil
2/3 cup buttermilk (or regular milk soured with 3/4 Tbls vinegar or lime juice & let stand 5 minutes)

How to:

1. Pre-heat oven to 450 degree.
2. Measure dry ingredients into bowl.
3. Pour oil and milk into bowl.
4. Stir until mixture cleans side of bowl and forms a ball.
5. To knead dough, turn onto waxed paper. Knead in waxed paper. Repeat until dough looks smooth.
6. Between two sheets of waxed paper, knead or pat dough until ½ inch thick.
7. Cut dough with unfloured biscuit cutter.
8. Place on ungreased baking sheet.
9. Bake 10 - 12 minutes or until golden brown.
