BANANA NUT MUFFINS
Makes 12 muffins
Ingredients:
1 stick butter (½ cup), softened
¾ cup honey or ½ cup Sucanat brand
2 eggs
2 large ripe bananas
2 cups whole wheat flour (made from hard white or soft white pastry wheat)
1 tsp. salt
1 tsp. baking POWDER
½ tsp. baking SODA
1 cup buttermilk, organic (or add one Tbls vinegar to regular milk and allow to
stand for 5 minutes)
½ cup chopped pecans
1 tsp. vanilla
How to:
1. Preheat oven 400 degrees.
2. Grease muffin pan or use paper cups
3. Mix butter and honey
4. Add eggs and banana
5. Add dry ingredients alternately with buttermilk
6. Add nuts and vanilla
7. Do not over mix, but batter should be smooth
8. Spoon into cups making them 2/3 full
9. Bake until light brown for 15-18 min.
