BANANA BREAD
Cream Cheese/Butter Icing
Ingredients: (If possible,
always use organic!)
1 tsp. vanilla (the real thing, no imitations)
½ c. honey or ½ c. Sucanat w/ Honey Crystals Brand
¼ c. - ½ c. butter
2 eggs
2-1/2 to 4 ripe, mashed bananas (depending on size) (peaches or mangoes may be
substituted)
2 cups freshly-ground hard white or soft white wheat or a mixture of both
1 tsp. baking POWDER
½ tsp. SODA
¼ tsp. Real salt Brand or Celtic Sea Salt Brand
1 tsp. cinnamon
½ c. currants or raisins
½ c. pecan or walnut pieces or slivered almonds (optional)
How to:
1. Mix all wet ingredients until well blended with an electric mixer or
by hand.
2. Add dry ingredients mixing well for about 2 min. Then add nuts and raisins just to blend.
3. Grease and flour large loaf pan or tube pan. Bake at 375 deg for 50 - 60 min. or until center is done. Check with toothpick or knife blade. Cool in the pan. Invert on plate and decorate with cream cheese icing and pecan meal, minced fruit, edible flowers, etc.
4. For Muffins: Use paper cup liners or grease pans. Bake same temp. for 6-10 min. depending on size of muffin. Check for doneness as with bread.
5. Recipe can be doubled or tripled.
Cream Cheese Icing
6-8 oz. Organic Cream Cheese
½ stick organic butter
1/3 c. honey
Mix together at high speed until whipped and creamy.
Frost a completely cooled cake.
Decorate with pecan meal, minced fruit, edible flowers, etc.
Refrigerate to seal the icing.
