WHOLE GRAIN PANCAKES
Makes 12 regular-sized pancakes
Ingredients:
DRY -
2-1/2 cups freshly-ground grains - make the base or largest amount
whole wheat (hard white or red wheat)
¼ cup non-instant dry milk powder (this is a good "storage use"
recipe)
2 tsp. baking POWDER
WET -
2 eggs
1-3/4 cup buttermilk, yogurt or milk soured with vinegar (1 Tbls. apple
cider vinegar per cup of milk)
2 Tbls. olive oil
3 Tbls. honey or ¼ cup apple sauce
How to:
1. Mix wet ingredients together, then dry ingredients in separate bowls.
2. Mix both mixtures together stirring only long enough to combine ingredients.
3. Bake on hot, greased skillet until done, turning once.
Serve warm with honey, maple syrup, apple sauce and yogurt, fruit, etc.
