Pita Bread
(for bread machine using
dough cycle)
Ingredients:
2 Tbls. yeast
5 cups whole wheat flour (use hard white wheat berries)
1-2 Tbls. honey
3 Tbls. olive oil
salt to taste (use Real or Celtic Sea Salt)
2 cups warm water (105-115 degrees)
sesame seeds
cornmeal
You will need:
Several cookie sheets
light cotton cloths to drape over rising dough (light muslin works great)
How to:
Add above ingredients (except seeds and cornmeal) to machine in order given by
the manufacturer. Start machine. Use white setting plus manual.
After first rising (or second if two risings desired), remove dough from pan. Divide into 16 equal pieces. Form each piece into a ball. Place a small amount of sesame seeds on counter. With rolling pin roll each dough in sesame seeds, turning once to cover with seeds. Roll until dough is round and approximately 1/8 inch thick. Place on a pan which has been floured with cornmeal. Cover with cloths and let stand for about 30 minutes.
Bake at 450 degrees on lowest rack of oven for 5 to 10 minutes until bread puffs up and starts to brown. If not used right away, cool on racks, then store in zipper-lock-type bags in freezer. Reheat before using.
