BANANA NUT DIAMONDS
GREAT WAY TO
USE UP OVER-RIPE BANANAS
Makes 3 dozen bars
Ingredients:
2 Tbls. butter, softened
1/4 cup honey
3/4 cup Sucanat brand (or 1 cup Sucanat instead of original honey & Sucanat
brand combination)
2 eggs
2 Tbls. molasses, optional
2 cups freshly-ground whole wheat flour (from hard white or soft white pastry
wheat)
1/2 tsp. salt
1/2 tsp. baking SODA
1 tsp. ground cinnamon
1/2 tsp. ground cloves or allspice
2/3 cup chopped nuts (your choice)
1/4 cup chopped raisins
1/4 cup chopped dates or other dried fruit, optional
3 over-ripe bananas
How to:
1. Mix together butter, Sucanat, honey, & eggs.
2. Add all dry ingredients mixing well.
3. Add bananas, nuts and fruit and mix well.
4. Spread thin on a well-greased pan measuring 18 x 12 x 1. A cookie sheet will
work providing batter is kept 1-1/2 inches from edge.
5. Sprinkle with additional nuts if desired.
6. Bake in pre-heated oven at 400 degrees for 12 to 15 minutes.
7. Cut into 2-inch diamonds and cool on wire racks.
