SAUSAGE STUFFED MUSHIES

Makes 12-15 pieces

Ingredients:

12-15 large fresh mushrooms
2 Tbls. butter, organic
2 Tbls. chopped onion
1 Tbls. lemon juice
1/4 tsp dried basil
salt & pepper to taste (instead of black pepper, use crushed red pepper flakes)
4 oz. Italian sausage, turkey or chicken based, out of casings
1 Tbls. chopped fresh parsley
2 Tbls. dried bread crumbs
2 Tbls. grated Parmesan cheese

How to:

1. Remove stems from mushies. Chop stems finely.
2. Place stems in a paper towel and squeeze to remove any liquid.
3. In a skillet, heat 1-1/2 Tbls. butter.
4. Cook stems and onions until soft.
5. Add lemon juice, basil, salt and pepper. Cook until almost all liquid has evaporated. 
6. Combine mushroom mixture with sausage and parsley.
7. Stuff into mushroom caps.
8. Combine crumbs and cheese. Sprinkle over mushrooms.
9. Dot each with remaining butter.
10. Place in a greased baking pan and bake at 400 degrees for 20 minutes.
11. Baste occasionally with pan juices. Serve hot.
