MAMA’S ANGELED EGG SALAD

Ingredients:
10-12 eggs, hard boiled, shelled
1/4 medium onion, minced
2 heaping Tbls. chopped olives (or salad olives)
1-2 tsp. Tabasco sauce
1 Tbls. mustard
2 heaping Tbls. mayonnaise
1 Tbls. juice from olives or lime juice
salt to taste
How to:
1. Boil eggs (approx. 20-30 min) until hard boiled.
2. Using an egg slicer, slice eggs, turning several times to acquire a small
square
3. In bowl, mix together all ingredients.
4. Refrigerate until cold.
5. Serve as salad, on toast, bread, pita, veggies, etc.
