KATHIE’S HOT GREEN TOMATO RELISH

Makes about 7 pints

Ingredients: (recipe may be doubled or halved)

4 quarts green tomatoes, chopped in chunks (about 32 medium)
2 cups sweet green peppers (or red), chopped (about 4 small)
1 cup onion, chopped (about 1 medium)
1 large jalapeno pepper, chopped
2 Tbls. mustard seed
1 Tbls. celery seed
1 Tbls. prepared horseradish
4 ½ cups vinegar
½ cup pickling salt
1 heaping Tbls. honey
several whole cayenne peppers

How to:

1. Sprinkle salt over vegetables in a large pot and mix thoroughly; let stand 3 or 4 hours.
2. Drain thoroughly. Press to remove free liquid.

3. In a separate pot, add honey, spices and horseradish to vinegar and simmer 15 minutes.
4. Add honey mixture to vegetables and bring to a boil.
5. Pack hot into jars, leaving ¼ inch head space.
6. Adjust caps.
7. Process 10 minutes in boiling water bath.
