KATHIE’S QUICK QUICHE
Makes 6 servings
Ingredients:
1 partially cooked 9" pie shell - homemade from freshly-ground soft
white wheat is best
1 cup Swiss cheese, organic best, grated
1 10-oz. package frozen, chopped spinach, well drained or two large bunches of
fresh, quickly steamed until wilted and drained well
1-1/4 cup organic half and half or fresh goat milk may be used
3 large eggs
1 tsp. Real salt
2 Tbls. butter, organic best
How to:
1. Spread ¾ cup of cheese and all spinach on the bottom of the pie shell.
2. Beat the cream, eggs and salt together until frothy. Use a whisk or blender.
3. Pour over the cheese and spinach.
4. Sprinkle with remaining cheese and dot with butter.
5. Bake at 375 degrees for 25-30 minutes or until pie is set and doesn’t
wiggle in the middle.
Other options:
Add cooked chopped chicken, ground beef, ground turkey, etc.
Instead of spinach, use broccoli or other veggies of choice, steamed and drained well.
