Lou's Antipasto

Great as an appetizer or side dish.

Ingredients:

1-14 oz. can hearts of palm, sliced into rounds, use as many as desired
1-7 oz. jar sweet-roasted pimiento peppers, sliced into strips
Several small strips of cheese such as Provolone, Swiss, Jarlesberg, Perrano, Romano, Parmesan, Gouda or other favorite, as much as desired
1 tbls chopped fresh basil or ½ tsp dried basil
1-2 garlic cloves, crushed
Olive oil
juice of ½ to 1 lemon
Option: anchovy fillets
Few leaves of fresh basil for garnish in center, optional

How to:

1. On a nice serving dish arrange the pimiento peppers. If using anchovies, arrange these on top of peppers.
2. Top with hearts of palm rounds.
3. Sprinkle with oil, garlic, lemon and basil.
4. Arrange slices of cheese.
5. If using, add fresh basil leaves to center as garnish.

This is a simple antipasto, but it is yummy.
