GREEK-ITALIAN TORTILLA ROLL-UPS
You will need:
Large flour tortillas, enough for each person to have one or more...
Hummus, one recipe (about 1 cup)
Brown rice, cooked (figure 1 cup for 4 people)
Black olives, chopped or sliced
Artichoke hearts, chopped
Feta cheese, crumbled
Italian salad dressing:
Mix the following together:
1/3 cup olive oil
½ fresh-squeezed lime
1 clove fresh-crushed garlic
salt to taste
Place ingredients on the flour tortilla.
Use as much of each item as desired, starting with hummus and following the
order shown on list.
Add salad dressing at the end.
Roll up tortilla at one end.
