KATHIE’S KRAZY GRANOLA

READ RECIPE BEFORE STARTING

This recipe was written for those who use a grain flaker. If you do not have one, you can still use it with some simple changes which will be shown. Note: You must use the oats and cinnamon. The other items in this first section are optional.

Ingredients:

3 cups oat flakes (you can flake rye, soft white wheat, spelt, barley or other soft grains)
1 Tbls each of flax seed and/or unhulled/hulled sesame seed (add to flaker ONLY when flaking other grains. If
no flaker, put flax and unhulled sesame seed in a coffee grinder for a second)
¼ cup sunflower seeds
¼ cup raw nuts
2 Tbls. unsweetened, shredded coconut
1 tsp. cinnamon, ground

Slightly heat the following.
Stir and add this mixture to the ingredients above.

2/3 cup olive oil or 1/3 cup olive oil & 1/3 cup coconut oil or 2/3 cup butter, melted
1/3 - 1/2 cup honey or Sucanat
1 Tbls. vanilla extract and/or 1/4 tsp almond extract (not flavoring)

Place in a sided-cookie sheet or baking pan.
Bake one hour at 300 degrees stirring occasionally.
Add all or any of the following to hot oats (grains):


Raisins or currants
dried fruit pieces
raw or roasted nut pieces
toasted or untoasted, unsweetened coconut
pumpkin seeds
grain-sweetened or non-sugar chocolate chips, carob chips or cacao nibs

Cool. Store tightly covered in the refrigerator.
